Banana Chocolate Cheesecake

Serves 8-10

  1. 150gm chocolate oat biscuits
  2. 75 gm butter
  3. 2 tbsp clear honey
  4. 6 bananas, peeled and cut into chunks
  5. 600gms Brown’s plain Cream Cheese
  6. 8 Tbsp Icing Sugar
  7. 1 Tbsp Mable Syrup or corn syrup
  8. 225g Tin of condensed milk
  9. For the Chocolate Sauce:
  10. 40gm butter
  11. 175ml Brown’s Mascarpone
  12. 225 chocolate roughly chopped

Place the crushed chocolate biscuits into a bowl. Add a third of the butter and all the honey to the crushed biscuits and mix everything together well with a wooden spoon. Spoon the biscuit mixture into a 9 inch spring form cake tin and flatten.

Heat a frying pan adding the remaining butter. Cook till brown. Add the bananas on top of the biscuit base, reserving a few to serve.

Place the cream cheese, icing sugar, maple syrup and the condensed milk into a bowl and blend.

Spoon over the bananas and leave to set in fridge overnight. For the chocolate sauce, place the butter, cream and chocolate into a saucepan and simmer over medium heat until smooth and glossy.
