Brie Stuffed Chicken with Mango & Bacon

Serves 2

  1. 100g Brown’s Brie
  2. 1 mango sliced
  3. 2 chicken breasts
  4. 4 slices of bacon
  5. Olive oil
  6. 1 red onion finely chopped
  7. 2 Tbsp double cream
  8. 125 ml white wine (optional)
  9. 125 ml mango or apple juice

Preheat the oven to 190 or gas mark 5. Slice the chicken breast making a pocket or envelope. Stuff the mango slice and brie slices into the chicken breast.

Wrap the chicken breast in the bacon slices. Heat a frying pan and add a Tbsp of oil. Cook the chicken breast one minute each side to get it nicely browned.

Transfer the chicken to the oven for 20 minutes until completely cooked.

For the Sauce:
Fry the red onion until soft. Add the white wine, apple or mango juice and reduce. Stir in the cream off the stove and your sauce is ready.
