Brown’s Cheddar, Tuna & Sweet Corn Burgers

Serves: 4

  1. 100 g white bread, torn into pieces
  2. 200 g can of sweet corn, drained
  3. 2 x 185 g cans of tuna (in water), drained
  4. 50 g Brown’s Cheddar, grated
  5. 3 spring onions, finely chopped
  6. 1 egg, beaten
  7. 2 tbsp vegetable oil

Whole grain bread rolls, lettuce and salsa to serve Use a food processor to whizz the bread into crumbs. Tip the crumbs into a bowl, and then whizz half the sweet corn until finely chopped. Combine the chopped corn, remaining whole corn, tuna, cheddar cheese, spring onions and some seasoning with the breadcrumbs and mix well. Add the egg, bit by bit (you may not need it all) until the mixture is sticky enough to be shaped into four even shaped burgers.

Heat a little oil in a pan, and then cook the burgers for 5 minutes on each side until golden. Stuff into wholemeal buns with your favourite lettuce and a good spoonful of salsa.
