Mozzarella Vegetable Frittata

Serves 4

  1. 1 tin of artichokes cut into 1/4-inch-thick slices
  2. 5 fresh or dried bay leaves
  3. 1/4 cup extra-virgin olive oil
  4. 4 garlic cloves, smashed
  5. Fine sea salt and freshly ground pepper
  6. 1 bunch Swiss chard (12 ounces), stems removed
  7. or spinach
  8. 5 large eggs blended with 1 Tbsp milk
  9. 1 1/4 ounces freshly grated Brown’s Mozzarella
  10. cheese (3/4 cup)
  11. 3 scallions, thinly sliced crosswise

Chop all the vegetables ready to add to the egg mixture.

Mix the eggs with the milk, chopped garlic cloves, herbs and Brown’s Mozzarella Cheese.

Heat the skillet pan with olive oil. Once warm add the egg, cheese and vegetable mixture and cook for 2 minutes over gentle hear until bubbly.

Place in an 180 degree oven for 20 minutes to finish cooking and serve with a simple salad.
